Deer gives the The ability Bounding Escape which gives you deer a considerable boost in your jumping capability, allowing you to reach ledges or avoid obstacles. The later tiers of the ability you'll find its quite easy to jump over town walls.

Currently what you eat doesn't really change your experience as a deer though eating meals prepared from deer meat may leave you with a guilty conscious but they probably deserved it anyway so enjoy.
